I think the key thing for exit interviews is to share your perspective and having zero expectation that they will take any action based on it. That being said, be considerate of what you say. In my experience, it is helpful to share your feedback framed on the "for future associates" perspective. (Ex: the onboarding program should cover X as it is a big piece for the roles in the team).
Don't give up to emotions and take your exit interview as a means to vent and drop your critics on the org. It might feel good once you're done with it, but it adds nothing to you, the organisation or the colleagues you leave behind.
